HOUSEHOLD USE ONLY

INSTRUCTIONS FOR USE

To make yogurt you need 1 quart of milk and 5 tablespoons of natural unflavored and unsweetened yogurt as a starter culture or one packet(] tbs.) of dried yogurt culture.

In a clean container carefully and thoroughly mix the milk with the yogurt starter culture. If necessary use a whisk or mixer.

Pour the mixture into the seven glass jars of the yogurt maker.

Place the jars without lids in the yogurt maker, then cover the yogurt maker with its lid and plug in the unit.

Depending on the type of milk and starter culture used, cooking time is normally 6 to 10 hours.

Longer times produce thicker and more strongly flavored yogurt.

In order to remember when the yogurt will be ready, turn the pointer on the handle of the yogurt maker cover to the "ready " time on the clock face on the cover.

When "ready" time is reached, disconnect the power plug.

When you remove the yogurt maker's lid, take care not to drip any water which has condensed on the lid into the finished yogurt.

Cover the individual jars with the white covers and chill them in the refrigerator at least one hour prior to eating.

HOW TO CHOOSE THE MILK

These types of milk do not need to be boiled prior to use. and may be used cold. Normal pasteurized cow's milk—full or skim, fresh pasteurized milk, sterilized milk, long-life UHT stenlized milk, powdered milk—full or fat-free. Fresh milk must be boiled and. if necessary, filtered.

Natural, cooked, unflavored soymilk may also be used. When making yogurt, always use milk at room temperature or just out of the refrigerator. If milk was fresh and was boiled, let it cool to room temperature before using.

USE FRESH INGREDIENTS

Check the expiration dates to be sure the starter culture yogurt and milk you are using are fresh. Once you have made yogurt, you may keep some aside to use as your own starter culture for future batches if you keep it refrigerated, unsweetened and unflavored and if it is fresh. Depending on culture potency, you may achieve 10 to 24 re-uses of your own yogurt as starter culture before it is necessary to use a new source of yogurt or culture as starter. Sealed packets of dried yogurt culture usually remain potent up to 18 months.

RECIPES

The Miracle Yogurt Maker lets you make natural yogurt or flavored yogurt. If you want to use fresh fruit to flavor your yogurt, you must cook it first or wait and add it to complete natural yogurt. Adding raw fruit to milk and culture before processing will likely prevent yogurt from thickening. The taste of natural yogurt varies according to the milk and basic components used. Remember that you can use whole or skim, raw or pasteurized or powdered milk to control the fat content of your yogurt.

You may add 4 or 5 spoonfuls of small-cut cooked fruit or jams, fruit jelly, concentrated fruit syrup and coffee and sugar to the mixture before cooking the yogurt. When using fruit jelly, dissolve the jelly in a pan over very low heat and slowly mix in half of the milk. Let it cool and add it to the remaining milk and starter culture. When using coffee, dissolve carefully the sugar and fresh brewed or instant coffee in the milk before mixing with the starter culture yogurt. To cook fresh fruit for use, peel as necessary and cut in small pieces. Cook it for 10 to 15 minutes over low heat in water and add sugar if desired. Let it cook before adding to the cold milk and starter culture mixture.

Remember that because the Miracle Yogurt Maker has seven individual jars, you may make up to seven different flavors at the same time!

CLEANING

After use, be sure that the power cord is disconnected from the power source. Never immerse the appliance in water or any other liquid. To clean the appliance, wipe the base unit with a soft, damp cloth and dry thoroughly. The glass jars and lids should be washed in warm, soapy, water. Ensure that the jars are completely clean, rinsed and dry before storage, and cool before reuse.
